Seriously the BEST broccoli salad ever! With cheese, cashews, red onion, crispy bacon + the creamiest dressing ever!

Ingredients

4 slices bacon, diced
5 cups coarsely chopped broccoli florets
½ cup shredded sharp cheddar cheese
⅓ cup cashews
¼ cup diced red onion
¼ cup dried cranberries

For the dressing

⅓ cup mayonnaise
¼ cup milk
2 tablespoons sugar
1 tablespoon apple cider vinegar

Instructions

Heat a large cast iron skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Drain excess fat; transfer bacon to a paper towel-lined plate.
In a large bowl, combine broccoli, cheese, cashews, onion, cranberries and bacon. Stir in dressing and gently toss to combine.
Cover and chill at least 1 hour before serving.

For the dressing

In a small bowl, whisk together mayonnaise, milk, sugar and apple cider vinegar.
